Last spring, we cooked our way through some of Chef Look’s favorite dishes. This time, we’re turning the tables with a new series inspired by your favorite meals! Adobo is a beloved dish steeped in history and widely recognized as the unofficial national dish of the Philippines. This month, we’re honored to prepare a traditional chicken adobo recipe that has been passed down through generations before reaching our kitchen. Sweet, salty, and infused with the bold flavor of whole peppercorns, this comforting dish has earned its place in the hearts of many. We’ll serve our adobo alongside classic accoutrements: ensaladang mangga (mango salsa) and sinangag (garlic fried rice). Join us as we explore the rich flavors behind this iconic meal. March's featured staff pick, chosen by Collection Development Librarian Caroline Drogin, is Didn’t Nobody Give a Shit What Happened to Carlotta by James Hannaham. In this novel, Carlotta, a Black Colombian trans woman, reenters life on the outside after more than twenty years in a men’s prison, over one consequential Fourth of July weekend in Brooklyn, New York.
